3-egg Lunch Omelette

In need for some mid-week motivation? Bored of eating the same foods? Not sure what to have for breakfast or lunch? If so, keep reading to find out how you can make a quick and easy 3-egg omelette. Β Just to make this even quicker for breakfast, you could put all the ingredients in a cup and cook in the microwave for a couple of minutes while you carry on getting ready, it really is easy!

You will need:

  • 3 eggs
  • Cubes of feta
  • 1 handful of spinach
  • Your chosen seasoning
  • Rocket for garnish

How to:

  • Pop all the ingredients in a jug and mix
  • Pour into a frying pan
  • Gently cook the bottom on the cooker
  • Cook the top using the grill (put the pan under the grill)
  • Serve and enjoy!
